Egg-Free Microwave Brownie...in less than 5 minutes!

Quick Fix Egg-Free Microwave Brownie

Okay. I have my moments when I'm really REALLY craving for a chocolate brownie topped with a big scoop of vanilla ice cream and I don't want to wait.  I don't want to preheat, measure, mix, pour, bake and then cool.  It's been a long crazy day, I'm dead tired and all I want is a warm gooey brownie and I want it NOW!
Well, thank goodness I have my microwave brownie to the rescue.  Sometimes I mix together the dry ingredients in a Ziploc bag and store it in my cupboard for emergencies.  Then, all I have to do is add the wet ingredients, zap it in the microwave for a minute and voila! Aaaaaaahhhh....CHOCOLATE HEAVEN :-)

Egg-Free Microwave Brownie
Makes one serving
Allergy Note: contains wheat and dairy ingredients

2 Tbs. melted butter or allowed margarine
2-3 Tbs. milk or water *
1/4 tsp. vanilla extract
4 Tbs. sugar
2 Tbs. cocoa powder*
2-3 Tbs. flour
2 Tbs. semisweet chocolate chips
pinch of salt

*For a rich fudgy brownie, use 2 Tbs. milk and 2 Tbs. flour.
For a cakey brownie, use 3 Tbs. milk and 3 Tbs. flour.

For vegan alternatives: use vegetable oil instead of butter and instead of regular chocolate chips, you can use Enjoy Life or Chocolate Dream brand chocolate chips. You can use Rice Dream ice cream instead of vanilla ice cream or top with strawberries or bananas.

In a small microwaveable bowl, mix together the melted butter, milk and vanilla extract. Add the sugar, cocoa powder, flour, chocolate chips and salt. Mix till combined. Microwave on HIGH for 1 to 1 1/2 minutes.  Allow to cool for 1 to 2 minutes. Top with a scoop of ice cream and drizzle with chocolate syrup.

This really sounds like chocolate heaven and its unbelievably quick!! About what size bowl would be right and how many servings would this make? (i know, I can eat it all by myself, just trying to appear to be otherwise;-)

Hi Suma! This makes one serving (well, at least for me - haha), but I'm sure it can be shared by two people. I used a small 6 oz. serving bowl to mix and microwave the brownie :-)

Looks like a good Christmas give-away. Just put it in a nice bottle and paste on instructions for milk, butter and vanilla :)

That's a cool idea! Maybe even put a funny label on it like "OPEN IN CASE OF EMERGENCY" :-)

This is amazing! I've tried lots of recipes of that kind but they all turned out really dry and "boring".
And this one doesn't even require eggs! yay! :)

This is scarily good!!! As a Mom of 3 who is allergic to eggs, but has serious sweet tooth, I'm always on the look out 4 easy egg free receipes & this one is awesome!!! I have to say, when I was mixing it together there were some doubters in my kitchen, but 5 mins after putting it in the microwave there were 4 dirty spoons and 1 empty bowl! It was a BIG hit - thanks 4 sharing!

Yup this did the trick. I didn't have any semi-sweet chips, just white chocolate which that worked just fine. I just wish they didn't all settle at the bottom, but my spoon reaches there too :) Thanks for this!

What about almond milk and coconut oil substituted for milk & butter?
Especially curious about whether almond milk will work even with butter.

I actually made this a few minutes ago. I'm slowly getting into the vegan diet so I used earth balance vegan butter for the butter and almond milk instead of regular milk.I also ran out of cocoa powder so I just upped the vanilla and made a blondie instead of a brownie. Very quick and tasty. I topped mine with a chocolate chip cookie and a small dollop of ice cream.

This was to die for! I only added 2tbs of sugar because I am a fan of the 'semisweet' brownie. I also cooked it for 1min and 15 and it turned out perfectly. My new go to quick dessert.

I accidentally put wayyyyy to much milk but decided to continue. I wasn't too happy with the end results but I have made this 2 times before so I can't say this is a bust.
